Squash Muffins - cooking recipe
Ingredients

1/2 c. butter or margarine
1/2 c. light brown sugar
1/2 c. molasses
1 large egg
1 1/4 c. cooked, mashed squash (any kind of squash)
1 3/4 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/3 c. chopped pecans
Preparation

Preheat oven to 375\u00b0.
Grease 12 muffin cups.
Cream butter and sugar; stir in molasses until well blended.
Beat in egg and squash.
Combine flour, soda and salt.
Stir into egg and squash mixture.
Add pecans.
Spoon batter into muffin cups.
Bake for 20 minutes.
