Veggies With Lemon Sauce - cooking recipe

Ingredients
    water
    3 lb. small red potatoes, quartered
    1 large sweet red pepper, sliced 1/2-inch thick
    2 c. broccoli florets
    1 (10 3/4 oz.) can cream of broccoli soup
    salt and pepper
    1/2 c. mayonnaise
    1/4 c. minced green onion
    1 Tbsp. lemon juice
    1/4 tsp. dried thyme
Preparation
    In pot with steamer basket, boil 3-inches water.
    Steam potatoes 10 minutes, then add peppers and broccoli for 5 minutes more or until tender.
    Place in serving dish and keep warm.
    In a 2-quart saucepan, combine soup, lemon juice and thyme.
    Heat over low heat.
    Add salt and pepper to taste.
    Pour over vegetables and serve.
    Makes 8 servings.
