Mama'S Apple Fritters(Mrs. Ada Brooks) - cooking recipe

Ingredients
    1 c. sifted all-purpose flour (sift before measuring)
    2 Tbsp. granulated sugar
    1 1/2 tsp. baking powder
    1/4 tsp. salt
    1 egg
    1/2 c. milk
    1/2 tsp. vanilla extract
    2 medium size tart apples, pared and coarsely chopped (1 1/2 c.)
    Crisco oil
    confectioners sugar
Preparation
    Sift together flour, granulated sugar, baking powder and salt. In medium bowl, with rotary beater, beat eggs, milk and vanilla until well combined.
    Gradually add flour mixture, beating until smooth.
    Stir in apples.
    In an electric skillet or heavy saucepan, slowly heat oil (1 1/2 to 2-inches deep).
    Drop fritters by rounded tablespoonfuls into hot oil.
    As they rise to surface, turn over with slotted utensil.
    Fry until golden brown on both sides (4 to 5 minutes in all).
    Drain on paper towel.
    Serve hot, sprinkled with confectioners sugar.
    Makes about 12 fritters.
