Mama'S Eggplant Casserole - cooking recipe
Ingredients

1 medium eggplant
1 small onion, minced
2 ribs celery, minced
3 to 4 Tbsp. cooking oil
16 oz. can tomatoes, drained
salt
pepper
margarine
Worcestershire sauce
1 egg, beaten
corn flakes
Preparation

Peel and cut eggplant in small pieces.
Parboil in salted water until it begins to clear.
Lightly saute onion and celery in oil.
Drain eggplant and add to skillet.
Add tomatoes; season with salt, pepper and Worcestershire and stir in egg.
Pour into casserole, dot with margarine and cover with crushed corn flakes. Bake uncovered 30 to 40 minutes in 350\u00b0 oven.
Serves 6 to 8.
