Vegetable Casserole - cooking recipe

Ingredients
    4 large tomatoes, sliced
    2 green peppers, diced
    1 potato, diced
    2 small carrots, finely sliced
    1 onion, chopped
    1 zucchini, sliced
    3 Tbsp. chopped parsley
    3 tsp. salt
    1 tsp. pepper
    1/2 c. water
    1/2 c. oil
    1 tsp. Tabasco sauce
    2 tsp. vinegar
    1 c. grated cheese
    1 c. rice (uncooked)
Preparation
    Line bottom of a 9 x 13-inch oiled baking dish with one-half of tomato slices, cover with one-half of the prepared vegetables, then sprinkle with the rice and remaining vegetables.
    Top with remaining tomato slices.
