Canadian Cheese Soup - cooking recipe
Ingredients

1/2 oz. onion, chopped fine
1 stick margarine
3/4 c. flour
1 tsp. salt
1/4 tsp. paprika
1 pt. chicken broth (2 bouillon cubes)
3 c. milk, scalded
2 carrots, chopped fine
2 celery stalks, chopped fine
7 oz. mild Cheddar cheese, shredded (may be little to strong)
Preparation

Saute onion and margarine.
Add flour, salt and paprika to make a roux.
Cook for 5 minutes.
Gradually add the chicken broth, mix until smooth.
Then add scalded milk and mix until smooth.
Cook carrots and celery in water until tender.
Drain and add to the soup.
Add cheese.
Bring to serving temperature. Makes about ten 8-ounce servings.
