Mexican Chicken - cooking recipe
Ingredients

1 lb. chicken, diced
1 onion, diced
1/2 bell pepper, diced
1/2 c. salsa
1/2 c. rice, cooked
1 c. low-fat Cheddar cheese
Preparation

Boil chicken, onion and pepper until chicken is tender.
Then add salsa and rice. Cover with cheese.
Cover with lid.
Simmer until cheese is melted.
