Basic Chicken Stock - cooking recipe

Ingredients
    1 roasting chicken, cut in pieces
    12 c. cold water
    2 medium yellow onions, quartered
    3 medium carrots, peeled and thinly sliced
    4 cloves garlic
    2 whole bay leaves
    6 sprigs parsley
    2 sprigs fresh rosemary
    4 black peppercorns
    1/4 tsp. salt
Preparation
    Place the chicken in a large stock pot.
    Add the water and bring to a boil, uncovered, over high heat, skimming off any scum. Adjust the heat so that the water bubbles gently, then add the remaining ingredients.
    Simmer, uncovered, about 3 hours, occasionally skim off the scum.
