Nine Day Pickles - cooking recipe
Ingredients

1 peck (4 qt.) small cukes
1 pt. salt or more
1 gal. water or more
1 Tbsp. alum
2 1/2 pt. vinegar
10 c. sugar
pickling spice and clove to taste
Preparation

Scrub cucumbers.
Place in a crock or stainless steel container.
Cover cucumbers with a brine made with water and salt. (If amount is increased, keep proportions the same.)
Let stand one week.
Drain.
Cover cucumbers with boiling water.
Let stand 24 hours.
Drain again.
Dissolve alum in enough boiling water to cover the cukes.
Let stand 24 hours.
Cut each pickle into bite size pieces and place in sterilized jars.
Cook together until seasoned the vinegar, sugar and spices.
Pour this syrup over the pickles in the jars.
Seal.
Best sweet pickle I've ever tasted.
