Slice Of Lemon Pie - cooking recipe
Ingredients

1 1/4 c. sugar
2 Tbsp. flour
1/8 tsp. salt
3 eggs, well beaten
1/4 c. soft butter
1 tsp. grated lemon rind
1 medium lemon, peeled, seeded and cut into paper-thin slices
1/2 c. water
pastry for 2-crust pie
cinnamon
sugar
Preparation

Beat together the first 5 ingredients.
Add rind, lemon and water and blend well.
Turn into pastry-lined 8-inch pie tin and cover with pastry, sealing edges.
Make air vents in top crust. Sprinkle with cinnamon and sugar.
Bake for 30 to 35 minutes at 400\u00b0.
