Banana Nut Bread - cooking recipe

1 3/4 c. all-purpose flour
2 tsp. baking powder
1/4 tsp. baking soda
3/4 tsp. salt
1/3 c. shortening
2/3 c. sugar
2 eggs
1 c. mashed, very ripe bananas (2 or 3)
Preparation

Sift the flour; measure and resift 3 times with baking powder, soda and salt.
Cream shortening and sugar until light and fluffy. Add eggs, one at a time, and beat well after each addition.
Add bananas and mix.
Add flour in 4 portions and beat until smooth after adding each portion.
Turn into a well-greased pan (8 x 4 x 2 1/2-inch) and bake in moderate oven (350\u00b0) for 50 minutes or until bread tests done.
Cool on rack before slicing.
Makes 1 loaf.
