Salami - cooking recipe

Ingredients
    5 lb. hamburger
    4 Tbsp. liquid smoke
    2 1/2 tsp. coarse pepper
    1 tsp. mustard seed
    4 Tbsp. curing salt (Morton Tender Quick)
    1 tsp. garlic powder
Preparation
    Knead all ingredients together.
    Put in covered bowl and refrigerate. Every day, knead for 5 minutes.
    Cover and put back in refrigerator.
    On the fourth day, knead and form into 2 to 4 rolls.
    Bake 9 hours at 200\u00b0 or at 160\u00b0.
    Bake on rack so grease drops off.
    Broiler pan works fine.
    When you remove from oven, drain on paper towels while cooling.
    Makes 4 rolls.
