Zucchini Squash Casserole - cooking recipe

Ingredients
    4 medium zucchini, diced
    3/4 c. shredded carrots
    1/2 c. chopped onion
    6 Tbsp. chopped margarine
    1 can cream of chicken or mushroom soup
    1/2 c. sour cream
    2 1/2 c. crushed herb croutons
    2 Tbsp. margarine, melted
Preparation
    Preheat oven to 350\u00b0.
    Boil zucchini in small amount of water until tender.
    In saucepan, saute carrots and onion in margarine. Stir in soup and sour cream.
    Add zucchini and 1 1/2 cups of the croutons.
    Spoon into a greased 9 x 13-inch pan.
    Combine remaining croutons and melted margarine; sprinkle over top.
    Bake for 30 minutes.
