Dash Diet Mexican Bake - cooking recipe

Ingredients
    1 1/2 c. cooked rice (preferably brown)
    1 lb. skinless, boneless chicken breast, cut in bite-sized pieces
    2 (14.5 oz.) cans no salt added tomatoes, diced or crushed
    15 oz. can no-salt-added black beans, drained and rinsed
    1 c. frozen yellow corn kernels
    1 c. each chopped red bell pepper and chopped green bell pepper
    1 Tbsp. each chilli powder and cumin
    4 garlic cloves, crushed
    1 c. shredded reduced-fat Monterey Jack cheese
    1/4 c. jalapeo pepper slices (optional)
Preparation
    Preheat oven to 400\u00b0. Spread rice in a shallow 3-quart casserole. Top with chicken. In a bowl, combine tomatoes, beans, corn, peppers, seasoning and garlic; pour over chicken. Top with cheese and jalapeo pepper. Bake 45 minutes. Serves 6.
