Potato Refrigerator Rolls - cooking recipe

Ingredients
    1 1/2 c. warm water (not hot)
    1 pkg. active dry yeast
    2/3 c. sugar
    1 1/2 tsp. salt
    2/3 c. soft shortening
    2 eggs
    1 c. lukewarm mashed potatoes
    7 to 7 1/2 c. sifted flour
Preparation
    In mixing bowl, dissolve yeast in water.
    Stir in sugar, salt, shortening, eggs and potatoes.
    Mix in flour with hand until dough is easy to handle.
    Knead on lightly floured board until smooth and elastic.
    Place greased side up in greased bowl.
    Cover with damp cloth, place in fridge 2 hours.
    Shape dough into crescent rolls. (Divide dough into 2 circles and cut into triangles and roll into crescent rolls.)
    May also shape dough into 2-inch balls, place in greased muffin cups.
    Cut each ball in half and then in quarters. Cover and let dough rise until double (2 to 3 hours).
    Heat oven to 400\u00b0.
    Bake 12 minutes.
    Makes about 4 dozen.
