Bayou Baked Red Snapper - cooking recipe

Ingredients
    1 whole Red Snapper
    1 stick butter
    1 bunch shallots, chopped
    1/2 tsp. oregano
    1 carton Button Mushrooms
    salt and pepper to taste
Preparation
    Preheat oven to 450 degrees. Clean fish and pat dry. Rub cavity with salt, pepper and butter. Place in well-greased baking pan and set aside. Heat 3 to 4 Tbsp. butter in heavy skillet. Add shallots and saute until soft but not brown. Add more butter and mushrooms, continue cooking - shaking pan until most butter is absorbed. Stir in oregano and pour mixture over fish. Bake fish 12 minutes per inch of thickness. Baste several times while baking.
