Chickpea Salad - cooking recipe
Ingredients

2 (19 oz.) cans chickpeas
1 clove garlic
1/2 c. black olives
1/3 c. chopped red onion
1/3 c. chopped parsley
1/4 c. vinegar
salt and pepper
1/2 c. olive oil
Preparation

Drain chickpeas and rinse.
Mince garlic.
Pit olives and slice.
Combine first 5 ingredients in a bowl.
In a small jar, shake together vinegar, 3/4 teaspoon salt and 1/2 teaspoon pepper until salt dissolves.
Add oil and shake again to combine.
Pour this dressing over chickpea mixture and toss.
Serves 6.
