Split Pea Soup - cooking recipe

Ingredients
    1 lb. split peas, soaked overnight, covered with water, then drained
    1 (2 lb.) smoked butt, cooked according to directions with 2 qt. water
    1 c. chopped onions
    salt and pepper to taste
    1 c. chopped celery
    1 c. chopped carrots
    1 tsp. chopped parsley
    1 c. diced or chopped potatoes
Preparation
    Remove butt; add peas and 1 quart water.
    Cover and simmer about 1 1/2 hours.
    Cut butt in pieces; add to soup with celery, carrots and parsley.
    Cook, uncovered, approximately 1/2 hour. Add potatoes; cook until potatoes are cooked.
