Eggs & Sausage Casserole(A Low Carb Recipe) - cooking recipe

3/4 cup sour cream
1 tsp salt
1/2 tsp paprika
1/2 tsp dry mustard
3/4 lb shredded sharp cheddar cheese
1 lb sausage (regular or sweet Italian) cooked & crumbled
8 eggs (beaten)
Preparation

Preheat oven to 325 degrees.
Lightly coat a 1-1/2 quart baking dish with non stick vegetable spray and set aside.
Combine sour cream, salt, paprika and mustard in a small bowl and blend well.
Spread half the cheddar cheese on bottom of the prepared baking dish.
Spoon dollops of half the sour cream mixture over the cheese.
Distribute all the sausage over the sour cream and pour the beaten eggs over the sausage.
Spoon dollops of remaining sour cream over the edges and cover with remaining cheese.
Bake for 25 to 30 minutes or until the eggs are set.
