Sauerkraut Salad - cooking recipe

Ingredients
    2 (7 oz.) cans sauerkraut (undrained)
    1 c. onions, finely minced
    1 c. sugar
    1 c. celery, minced
    1 c. green pepper, minced
    2 carrots, grated
Preparation
    Put sauerkraut in a large bowl.
    Add celery, green pepper and onions.
    Grate carrots and add them to mixture.
    Add sugar and stir with wooden spoon.
    Cover tightly and marinate in the refrigerator for 2 or 3 days; stir 2 or 3 times a day (optional). All vegetables become crisp as the salad ages a day or so.
    Serves 4.
