Bean Chalupa - cooking recipe

Ingredients
    1 lb. pinto beans
    3 lb. pork roast (lean)
    7 c. water
    1/2 c. chopped onions
    2 garlic cloves, chopped or garlic powder
    1 tsp. cumin
    1 tsp. oregano
    1 (4 oz.) can chopped green chilies
    1 (2 oz.) jar diced pimentos
    corn chips
Preparation
    Place beans, pork roast, water, onions, garlic, chilies and pimentos in a heavy kettle. Cover and simmer about 5 hours or until tender.
    Remove roast and break up with a fork.
    Return to pot. Cook, uncovered, about 1/2 hour until thick.
    Serve over corn chips.
    Condiments:
    Diced tomatoes, diced avocado, diced onions, grated Cheddar cheese, hot pepper sauce or taco sauce.
