Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1 large onion
    1 can mushroom soup
    1 1/2 c. grated cheese
    salt and pepper
    1 c. cracker crumbs
Preparation
    Cook and mash eggplant.
    Add salt and pepper to taste.
    Add onion.
    Place in casserole dish and sprinkle with cracker crumbs. Bake in moderate oven until firm.
