Southern Yam Cake - cooking recipe
Ingredients

1 1/2 c. cooking oil
2 c. sugar
4 eggs, separated
2 1/2 c. sifted cake flour
4 Tbsp. hot water
3 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 1/2 c. grated raw yams, peeled
1 c. chopped nuts
1 tsp. vanilla flavoring
Preparation

Combine oil and sugar; heat until smooth.
Add egg yolks and beat well.
Add hot water, then dry ingredients.
Stir up potatoes, nuts and vanilla.
Mix well.
Beat egg whites until stiff.
Fold into mixture.
Bake in greased and floured pan at 350\u00b0 for 30 minutes.
Best for layer cake.
