Carrot-Coconut Salad - cooking recipe
Ingredients

1 1/2 c. fresh, fine shredded carrots
1/3 c. mayonnaise, blended with 2 Tbsp. sour cream
1/2 c. fresh grated or canned, moist coconut
dash or so of salt
lettuce
Preparation

Measure all ingredients, except lettuce, into a mixing bowl. Use forks to toss together lightly until dressing is well distributed.
Arrange lettuce cups on salad plates and lift salad lightly into cups.
Makes 4 servings.
