Dijon Chicken - cooking recipe

Ingredients
    4 chicken breast halves, skinned and boned
    1 Tbsp. cooking oil
    1/2 c. chicken broth
    1/4 c. white cooking wine
    2 c. sliced fresh mushrooms
    2 Tbsp. chopped fresh parsley
    2 Tbsp. minced onion
    1/8 tsp. pepper
    2 Tbsp. chopped fresh parsley
    1 Tbsp. Dijon mustard
Preparation
    Place
    each
    piece of chicken between 2 sheets of waxed paper and
    flatten
    using a meat mallet or rolling pin.
    Heat oil
    in large
    skillet
    over medium-high heat until hot.
    Add chicken
    to skillet;
    cook
    3 to 4 minutes on each side until lightly browned.
    Remove from skillet and set aside.
    Combine chicken broth,
    wine, mushrooms, 2 tablespoons parsley, onion and
    pepper in a skillet.
    Cover and cook 10 minutes.
    Remove chicken
    and vegetables to a plate using a slotted spoon; keep warm.
    Cook broth mixture over medium-high heat until sauce is reduced
    to about 1/2 cup.
    Remove from heat; stir in 2 tablespoons
    parsley and
    Dijon
    mustard with a wire whisk.
    Spoon sauce over chicken. Serve warm.
