Apricot Upside Down Cake - cooking recipe
Ingredients

1/4 lb. butter
1 c. brown sugar
1 can apricots, drained (save juice)
3 eggs
1 c. sugar
1 c. flour
1 tsp. baking powder
5 Tbsp. apricot juice
Preparation

Melt butter in an 8 X 8 baking pan.
When melted add the brown sugar.
Return to oven for sugar to melt in butter.
Add apricots with hollows up.
In a bowl, beat egg yolks, Add sugar and juice.\tAdd flour sifted with baking powder.
Fold in beaten egg whites last.
Bake at 350\u00b0 for 50 to 60 minutes.
