Sweet Potato Custard - cooking recipe

Ingredients
    3 eggs
    4 Tbsp. butter
    3/4 c. sugar
    1 c. mashed and strained sweet potatoes
    1 1/2 c. milk
    lemon or nutmeg flavoring
Preparation
    Boil, mash and strain sweet potatoes, then measure. Add butter and milk. Separate eggs.
    Beat yolks with sugar. Add to potatoes. Add flavoring. Beat whites stiff and fold into mixture. Pour into unbaked pie crust and bake 30 minutes at 350\u00b0 or until done.
