Red Beans And Rice - cooking recipe

Ingredients
    1 lb. dried red or kidney beans, soaked overnight
    1 medium chopped onion
    1 garlic clove, minced
    1 lb. ham, cut into 1-inch cubes
    1/4 c. chopped parsley
    2 Tbsp. butter or bacon grease
    salt
    pepper
    cayenne pepper
Preparation
    Saute ham, onion,
    garlic
    and
    parsley in butter until golden.
    Drain beans and mix with sauteed mixture.
    Cover with water.
    Add salt, pepper
    and
    cayenne pepper to taste.
    Bring to a boil and simmer
    over
    very low heat until beans are soft and creamy, about 4 hours.
    May
    be
    refrigerated
    for
    2 to 3 days and reheated slowly.
