Potato Rolls - cooking recipe

Ingredients
    1 pkg. dry yeast (RapidRise)
    1/2 c. hot mashed potatoes
    1/4 c. shortening
    1/4 c. sugar
    1 tsp. salt
    1 c. scalded milk
    1 egg
    4 to 4 1/2 c. sifted flour
Preparation
    Combine potatoes, shortening, sugar, salt and hot milk.
    Cool until lukewarm.
    Add egg and yeast.
    Stir in flour.
    Beat well. Knead on slightly floured surface until smooth and elastic.
    Place in lightly greased bowl, turning once to grease surface.
    Cover and let rise until double (about 1 hour).
    Punch down and let rise 10 minutes.
    Roll and cut into shape.
    Place on greased baking sheet. Cover and let rise until almost double (about 1 hour). Bake in hot oven at 400\u00b0 for 10 to 12 minutes. Brush tops with butter.
