Fatoosh(Toasted Bread Salad) - cooking recipe
Ingredients

6 slices whole wheat bread or 3 large pita rounds
4 to 5 garlic cloves
1 to 3 red and green bell peppers
2 bunches scallions
1/2 head romaine lettuce
3 to 4 Tbsp. dried mint
2 Tbsp. cold water
2 to 3 cucumbers
1 bunch parsley
3 to 4 tomatoes
3 to 4 lemons
olive oil to taste
Preparation

Toast bread and break into small pieces.
Sprinkle with water to moisten the toast somewhat and mix.
Crush garlic with salt in large bowl.
Put bread on top of mashed garlic.
Cut cucumbers in small chunks, peppers, tomatoes and lettuce in small pieces.
Mince parsley with stems and scallions.
Put all these vegetables over the bread.
Add mint, lemon juice, olive oil and salt to taste. Mix well with hands.
Serves 6 to 8.
