Zucchini Relish - cooking recipe

Ingredients
    11 c. diced zucchini squash
    3 c. diced onion
    3 Tbsp. salt
    3 c. chopped peppers (some red for color)
    1 Tbsp. white mustard seed
    1 Tbsp. celery seed
    1 tsp. turmeric
    3 c. sugar
    2 c. vinegar
Preparation
    Mix the squash, onions and salt; let stand overnight.
    Drain well.
    Add the peppers, mustard seed, celery seed, turmeric, sugar and vinegar.
    Boil until clear, about 1/2 hour.
    Seal in hot sterile jars.
