Zucchini Nut Muffins - cooking recipe

Ingredients
    3 eggs
    1 c. cooking oil
    1 Tbsp. vanilla
    2 c. shredded zucchini
    2 c. sugar
    2 c. all-purpose flour
    1 1/2 tsp. baking soda
    1 Tbsp. cinnamon
    1 tsp. salt
    1/4 tsp. baking powder
    1 c. chopped nuts
Preparation
    Preheat oven to 400\u00b0.
    In medium mixing bowl, combine eggs, oil, vanilla and zucchini; mix well.
    Add remaining ingredients and stir until moistened.
    Use paper baking cups in muffin tin or grease muffin cups.
    Fill cups 2/3 full.
    Bake for 15 to 18 minutes.
