Carrot-Pineapple Cake - cooking recipe

1 1/2 c. flour
1 c. sugar
1 t. baking powder
1 t. baking soda
1 t. cinnamon
1/2 t. salt
2/3 c. cooking oil
2 eggs
1 c. finely shredded raw carrot
1/2 c. crushed pineapple (with juice)
1 t. vanilla
Preparation

In a large mixing bowl, stir together the dry ingredients. Add oil, eggs, carrots, pineapple and vanilla. Mix until all ingredients are moistened. Beat with electric mixer 2 minutes at medium speed. Pour batter into a greased and lightly floured 9 x 9 x 2-inch pan. Bake at 350\u00b0 about 35 minutes. Cool.
