Caribbean Banana Nut Bread - cooking recipe
Ingredients

2 c. all-purpose flour
1 c. chopped pecans
1/3 c. granulated sugar
1/3 c. firmly packed light brown sugar
1 Tbsp. baking powder
1 tsp. salt
1/8 tsp. nutmeg
2 eggs, beaten
1 1/2 c. mashed bananas
1/2 c. milk
3 Tbsp. butter, melted
1 tsp. rum extract
Preparation

Stir together dry ingredients, including nuts.
Blend remaining ingredients.
Add all at once to flour mixture, stirring only until flour is moistened.
Pour into well-greased 9 x 5-inch loaf pan.
Bake in moderate oven (350\u00b0) about 60 to 65 minutes or until tests done.
If necessary, cover with aluminum foil to prevent top overbrowning.
Cool 15 minutes before removing to rack.
