Carrot-Potato Pancakes(Brunch) - cooking recipe

Ingredients
    3 medium potatoes, pared
    2 medium carrots, pared
    1 small onion
    2 eggs
    1/2 tsp. salt
    dash of pepper
    2 Tbsp. matzo meal
    1 Tbsp. melted Rokeach Nyafat (kosher pave or neutral fat)
    1/2 c. Nyafat for frying or substitute like nonfat oil
Preparation
    Using coarse side of grater, grate potatoes, carrots and onion into mixing bowl.
    Beat in eggs, spice, matzo meal and melted fat. Meanwhile, heat 1/2 cup Nyafat in large skillet over medium heat 3 minutes.
    Drop potato batter by tablespoons into hot fat.
    Flatten into thick cakes and fry 3 minutes on each side over medium heat. Drain on paper towels.
    Serve hot (serves 4 to 5) with applesauce.
