Minestrone Soup - cooking recipe
Ingredients

1/4 c. oil
2 garlic cloves, minced
1/2 c. chopped onion
2 celery stalks with leaves, chopped
2 carrots, diced
1 (1 lb.) can tomatoes
3 beef bouillon cubes
2 c. diced potatoes
1 c. chopped cabbage
3 Tbsp. chopped parsley
2 tsp. salt
1/4 tsp. pepper
1/2 tsp. marjoram
1/4 tsp. rosemary
1 c. ditalini
1 (10 oz.) pkg. frozen peas
1 large can kidney beans, undrained
Parmesan cheese
Preparation
-
Saute onion, garlic and celery.
Add everything, except ditalini, peas, beans
and\tParmesan cheese.
Simmer, covered, for 40 minutes or
longer.
Add
ditalini,
peas
and\tbeans. Bring back to boiling.
Reduce heat.
Simmer for 20 minutes or longer. Serve with cheese sprinkled over each serving.
