7 Hour Wheat And White Bread - cooking recipe
Ingredients

1 qt. water at 100~
6 Tbsp. sugar
1/3 c. molasses
2 pkg. dry yeast
4 to 6 c. whole wheat flour
2 c. milk, scalded
4 tsp. salt
8 tsp. oil
12 to 14 c. unbleached white flour
Preparation

Combine water, sugar and molasses.
Dissolve yeast in 1/2 cup of this mixture and set aside.
Mix wheat flour into remaining mixture.
Add yeast mixture and let stand 1 hour.
Scald milk, salt and oil.
Let cool to room temperature and add to wheat mixture. Stir in 12 cups white flour.
Knead into this as much additional white flour as necessary to keep dough from sticking to hands.
Let rise for 2 to 2 1/2 hours.
Punch down and cut into 5 loaves.
Let rise in well-greased loaf pans until doubled in size, about 1 1/2 to 2 hours.
Bake at 350\u00b0 for 45 minutes.
