Ingredients

3 c. grated potatoes (fine)
2 eggs, beaten
4 Tbsp. grated onion
2 Tbsp. flour
1 tsp. salt
dash of black pepper
vegetable oil (for frying)
Preparation

Put grated potatoes in colander and let drain.
Combine with eggs, onion, salt, pepper and flour.
Drop spoonfuls into hot oil and fry until brown.
Drain well on paper towel and serve hot.
Can be served with applesauce or mix equal parts cottage cheese and sour cream.
