Mini Meat Loaves - cooking recipe

Ingredients
    2 lb. ground beef
    1/4 c. dry bread crumbs
    1 egg, slightly beaten
    1/4 c. finely chopped onion
    1 tsp. salt
    1/4 tsp. pepper
    1 can tomato soup
    2 Tbsp. shortening
    2 Tbsp. water (or more)
Preparation
    Combine ground beef, bread crumbs, egg, onion, salt, pepper and 1/4 cup soup in bowl; mix well.
    Shape into 6 miniature meat loaves.
    Brown in shortening in skillet; drain.
    Stir in remaining soup and water.
    Simmer, covered, for 20 minutes or until done to taste, stirring occasionally.
    Serve with potatoes and broccoli. Yield:
    6 servings.
