Lemon Delight Squares - cooking recipe

Ingredients

1/2 c. butter
1 c. flour
1/4 c. confectioners sugar
3 eggs
1 1/2 c. granulated sugar
3 tsp. lemon rind
4 Tbsp. lemon juice
1/4 c. flour
3/4 tsp. baking powder
pinch of salt

Preparation

Mix the first 3 ingredients together and pat into an 8 x 8-inch pan.
Bake at 350\u00b0 for 15 minutes; set aside.
Beat eggs well; stir in granulated sugar, lemon rind and juice.
Set aside. Mix together 1/4 cup flour, baking powder and salt; add to egg mixture.
Pour over crust.
Bake for 30 to 35 minutes at 350\u00b0, until slightly golden.
