Creamed Leeks - cooking recipe

Ingredients
    1 lb. leeks
    1/4 c. olive oil or safflower
    1/4 c. potato flour or brown rice flour
    1/4 c. olive oil
    1 c. water
    salt and pepper to taste
Preparation
    Trim and slice leeks crosswise, then wash them well.
    In a heavy skillet, saute leeks in 1/4 cup olive oil for about 5 minutes.
    Turn down heat. Cover tightly to steam for 10 minutes or so.
    Put 1/4 cup olive oil in saucepan. Dissolve potato flour or brown rice flour in oil and heat until mixture bubbles. Stir in water. Continue to cook a minute or so until well combined.
    Cook 10 minutes longer after adding leeks. Salt and pepper to taste. Makes 6 to 8 servings.
