Applescotch Pie - cooking recipe

4 1/2 c. thinly sliced tart apples
1 c. brown sugar, packed
1/4 c. water
1 Tbsp. lemon juice
1/4 c. all-purpose flour
2 Tbsp. sugar
3/4 tsp. salt
1 tsp. vanilla
3 Tbsp. butter
Preparation

Combine apples, brown sugar, water and lemon juice in a saucepan.
Cover and cook over medium heat until apples are just tender, about 5 minutes.
Mix flour, salt and sugar and stir into apple mixture.
Cook, stirring constantly until syrup thickens, about 2 minutes.
Remove from heat and stir in vanilla and butter. Pour into unbaked pie crust.
Bake at 425\u00b0 for about 35 minutes or until done.
