Zucchini And Tomato With Herbs - cooking recipe
Ingredients

1/4 c. chopped onion
2 tsp. olive oil
1 bay leaf
1 tsp. dried basil
1/4 tsp. pepper
2 c. unpeeled, chopped tomatoes
1 clove garlic, minced
5 c. sliced zucchini (1 3/4 lb.)
1/2 tsp. dried oregano
1/3 c. water
1 tsp. sugar
Preparation

Cook onion and garlic in oil in a Dutch oven over medium-high heat, stirring constantly, until tender.
Stir in zucchini, bay leaf, basil, oregano, pepper and water.
Cover and cook over medium heat 10 minutes.
Stir in chopped tomatoes and sugar. Cover and cook 5 minutes.
Remove and discard bay leaf.
Yields 5 servings (1 cup servings), 36% from fat.
