Low-Fat Banana Bread - cooking recipe

1 3/4 c. flour
2/3 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 c. mashed ripe bananas (2 to 3 medium)
1 tsp. cinnamon
1/3 c. applesauce
2 Tbsp. skim milk
2 eggs or equal amount egg substitute
Preparation

In a large mixing bowl, combine 1 cup flour, sugar, baking powder, baking soda, salt and cinnamon. Add mashed bananas, applesauce and milk.
Beat on low speed until blended, then on high speed for 2 minutes. Add eggs or egg substitute and remaining 3/4 cup flour. Beat until blended. Spray an 8 x 4 x 2-inch loaf pan with nonstick spray.
Pour batter into pan. Bake at 350\u00b0 for 55 to 60 minutes or until a toothpick inserted near center comes out clean.
