Shrimp-Rice-Bean Salad - cooking recipe

Ingredients
    1/2 c. converted white rice
    8 oz. shrimp, shelled and deveined
    1 (15 oz.) can black beans, drained and rinsed
    1/4 c. medium-hot salsa
    2 Tbsp. reduced fat sour cream
Preparation
    Cook rice, following package directions.
    Drain and rinse. Place in medium-sized bowl.
    Bring 4 cups water to boil in medium saucepan.
    Add shrimp.
    Simmer, uncovered, for 3 minutes or until shrimp is cooked through.
    Drain.
    Add along with beans to rice. Cool to room temperature.
