Bread Pudding (Diabetic) - cooking recipe

Ingredients
    6 slices day old bread, crust removed
    2 Tbsp. lo-cal oleo
    sugar substitute to equal 3/4 c. sugar, divided
    1 tsp. ground cinnamon
    1/2 c. raisins
    4 eggs, beaten
    2 c. skim milk
    1 tsp. vanilla
Preparation
    Brush bread lightly with melted oleo; sprinkle with 1 teaspoon sugar substitute and cinnamon.
    Quarter each bread slice.
    Layer with raisins in a 1 1/2 quart dish coated with cooking spray. Combine eggs, milk, vanilla and remaining 2 teaspoons sugar substitute, pour over bread and raisins.
    Place dish in a pan containing 1 inch hot water.
    Bake at 350\u00b0 for 55 minutes to 1 hour or until knife inserted in center comes out clean.
