Eggplant Patty Casserole - cooking recipe
Ingredients

1 medium eggplant
1 onion, diced
2 eggs
1 c. chopped nuts
1 c. cracker crumbs
salt to taste
mushroom soup
Preparation

Dice eggplant and cook in small amount of water until done. Drain well.
Put in mixing bowl.
Saute onion until clear and add to eggplant.
Add remaining ingredients.
Add more cracker crumbs if needed to hole together.
Form into patties and fry in small amount of oil.
Lay in casserole dish and cover with mushroom soup. Bake at 350\u00b0 for about 20 minutes.
Makes 8 to 10 patties.
