Ingredients

1/4 c. butter
5 medium yellow onions, thinly sliced
1/8 tsp. sugar
2 Tbsp. flour
5 c. low sodium beef broth
1/2 tsp. thyme, crumbled
1 bay leaf
1/4 tsp. pepper
8 (1/2-inch) slices French bread, toasted
1 c. shredded Swiss cheese
1/4 c. Parmesan cheese
Preparation

Melt butter in large saucepan over medium heat.
Add onions. Cook for 10 to 15 minutes or until golden, stirring gently.
Stir in sugar and flour.
Cook for 3 minutes longer, stirring constantly.
Add broth, thyme, bay leaf and pepper; mix well. Bring to a boil over medium-high heat, stirring constantly.
Boil for 6 minutes, stirring constantly; reduce heat.
Simmer, loosely covered, for 30 minutes.
Remove and discard bay leaf.
Ladle into ovenproof bowls.
Top with French bread; sprinkle with Swiss and Parmesan cheese.
Broil 4 to 6 inches from heat source for 2 minutes or until golden.
