Ingredients
    3 qt. prepared watermelon rinds
    7 c. sugar
    2 c. white vinegar
    1/2 tsp. oil of cloves
    1/2 tsp. oil of cinnamon
Preparation
    To prepare watermelon rinds, you will need to remove all pink fruit and dark green peel. Cut into bite size pieces.
    Cover the rinds with water and boil for 10 minutes. Drain.
    Combine sugar, vinegar and spices in a saucepan. Boil.
    Pour over rinds and let stand overnight.
