Zucchini Bread - cooking recipe
Ingredients

3 eggs
2 c. sugar
1 c. vegetable oil
1 Tbsp. vanilla
2 c. loosely packed, coarsely grated zucchini
2 c. flour
1 Tbsp. cinnamon
2 tsp. soda
1 tsp. salt
1/4 tsp. baking powder
1 c. chopped walnuts (optional)
Preparation

In a bowl, beat eggs until frothy.
Add sugar, oil and vanilla.
Beat until thick and lemon colored.
Sift together flour, cinnamon, soda, salt and baking powder.
Add sifted ingredients and zucchini to mixture.
Pour into 2 oiled and floured loaf pans.
Bake at 350\u00b0 for one hour or until tester comes out clean.
Let cool 20 to 30 minutes before turning out.
